Big Salad

I’ve been feeling a bit down today. I think it’s mostly just the Tuesday Blues (does that exist?) Another week back to class after a nice weekend with family. Plus, I’m just getting sick of college. There, I said it. I’m tired of the long nights and the multi-subject studying.

Don’t get me wrong, I really like learning new things – I’m just pretty sick of getting graded on them… Grades that determine your stupid GPA. And exams. I’m NOT a great test-taker. I’m just ready to do something I love with my life that isn’t like college.

Anyway, I had this for supper:

And it definitely made me feel a little better! I totally believe good food can boost your mood and make everything more bearable.

Awesome Starter Kit

From a post by VeganFuture on Twitter, I discovered this Vegan Starter Kit for Teens.  It seems like everything I read like this, meant for people younger than me, is actually really beneficial to me.  I think it’s because I’m still fairly new to the vegan lifestyle.  I understand exactly why I love eating vegan and not eating animal products, but when I think about explaining that to someone else… I don’t even know where I’d begin.  This especially goes to people who are absolutely certain that I’m going to develop an enormous amino acid deficiency in a few years because I can only get them from animal products.  Well, of course I questioned everything I was doing after I heard that.  It turns out this person was wrong in their assumption anyway, but it really does help to be educated about your personal beliefs. 

 That’s why I’m really loving this starter kit, because it is to-the-point and explains exactly what vegans need to make sure they eat to stay healthy, and why being vegan just makes sense. It even covers vegetarianism in the Bible!  I absolutely love living this way and I love reading about it.

A paragraph from it:

“Unfortunately, because animal byproducts are so cheap, companies have put them in so many things that avoiding all of them is impossible. Many vegans eventually decide that it is not important to avoid every single ingredient at any cost. Instead, it is more important to avoid the more obvious products of animal exploitation and use our energy to persuade others to do the same.  When more people avoid the obvious animal products, the byproducts will become less plentiful and more expensive; companies will replace them with other materials. In other words, persuading one person to give up eating chicken will likely do more good than if hundreds of vegans went from 99% to 99.9% pure.”

Sweet Tooth

I don’t know what it is about cold, winter days, but they always make me want sweet stuff!  Specifically ice cream.  Ironic, right? 

I had a political science test today, my last class on Tues/Thurs, so I skipped out on my English class before to give me more time to study.  During my short little study review, I enjoyed a Mint Chocolate Chip Tofutti Cutie

I’m loving these things!  They are completely dairy-free and vegan, and the perfect little snack size with only 1 gram of saturated fat in a whole sandwich.  Compare that to an ice cream sandwich made with milk!

Before I started eating vegan, I really watched my saturated fat content.  I knew it was bad for my heart, plus the fact that high-saturated fat foods just make me feel gross and lethargic.  Good news, though: a vegan diet makes it SO easy to avoid those pesky saturated fats and get the healthy fats we all need!  I love that I can eat treats often that I know aren’t messing up my body because I trust the ingredients in them.

Speaking of treats, last week I ordered vegan Valentine treats for me and John (the boyfriend) from Vegan Essentials.com.  I’m currently waiting to receive the Cherry Bavarian Cream Filled Donuts, Wild at Heart Raspberry Truffles, and some Ener-G Egg Replacer (because no place in my area seems to have it, and I want it for baking!) Sadly, right after I ordered these the winter weather decided to hit us with a snow storm, delaying my package, so I’m still waiting for it to come in.  It sucks because I’m so anxious to try those donuts!! I promise to post pictures when these awesome eats do come in.

While I was studying, I took a “break” to look at a recent favorite website of mine: Etsy.com, a marketplace with all types of items made by artists of all kinds.   I just discovered some of the food shops, and happened to see this….

This little delight, made by the Etsy user SweetVegan, is called a Wookie (SandWich cOOKIE) – two vegan red velvet cake cookies with cream cheese frosting in between.  Can you say… heaven?  If I wasn’t already waiting on my body weight in sweet stuff, I’d already have my order sent in, days ago.  Check ’em out!

Obviously, I have a big sweet tooth.  And now I need to get to studying some Spanish, so I’ll leave you with one more sweet thing 🙂

Poor Start

This morning was a rather big fail on my part. I have my first exam of this semester in my Visual Communications class today, and although I normally try to avoid putting off most of my studying until the night before and losing lots of sleep, sometimes it happens anyway. Like last night.

And a fact about me: I HATE losing sleep. I’m basically useless if I don’t allow myself good nights’ rest… Which is probably why I often suck at college.

So yeah, this morning I couldn’t get my tired butt out of bed early enough, so I ended up getting to campus too late for my 10 AM Yoga class. I know, it’s not even that early….

I’d definitely say preparation is key, for me. Normally my breakfast looks something like this:

This morning, it was coffee in my car. (I couldn’t take a picture ’cause my phone is being dumb, but you get the idea. For me to keep up my healthy habits (and my sanity!) I have to plan out what I’m going to eat, wear, and take with me the night before. Otherwise I end up either late or extremely rushed.

I did make my lunch last night, though 🙂 It was an Ezekial bread pita filled with vegan cream cheese, spinach, black beans, corn, and salsa. I really need to figure out what’s up with my phone so I can post pictures again.

Food Pictures

A few days ago, I tried to post pictures of the food I’ve been eating recently, and I thought I accidentally deleted them when I was transferring them to my laptop; but turns out, I was wrong! I just found ’em 🙂
Ordered cheese-less Domino’s Veggie Pizza w/ Daiya (dairy-free) cheese.

Ezekial wrap with hummus, lettuce, tofu, pine nuts, and olive oil.

Baked potato with stir-fried veggies and brown rice. (This one took a while because I didn’t use anything instant.  It hasn’t happened again in a while.)

“Black-and-white” cupcakes.  I got the idea from a website and changed it up a bit.  I honestly can’t remember exactly what all I put in them.

Amy’s Roasted Vegetable Pizza (cheeseless) topped with Daiya mozzarella, vegan chicken strips and Boca burger crumbles marinated in BBQ sauce.  DE-LI-CIOUS!!  This one is a little more costly, and I normally try to avoid the “fake” foods because they’re more processed, so it was definitely a treat… but worth it!  My mouth is watering just thinking about it.

Yum!  Can’t wait to get to making some more yummy food!

Cake! minus the oven

Tuesdays and Thursdays are my long days at college, so it’s not uncommon for me to come home craving something sweet to eat while I relax (pass out). So yesterday (Tuesday) I made the No-Bake Chocolate Cake from Vegan College Cookbook. So awesome!!

You just stir the ingredients into a bowl, microwave, and voila!

My new life of Veganism

With the new year, I made a big decision for myself:  that I was going to start eating completely vegan.  What is vegan, you ask?  I avoid all animal products, meaning meat and meat byproducts, dairy, and eggs.  And guess what?  I feel great!!

And the first part of my thanks goes to the writers of the book Skinny Bitch, Rory Freedman and Kim Barnouin.  Secondly Alicia Silverstone, writer of The Kind Diet.  I read these books in that order and it was like a little lightbulb went off in my head, over and over again.

Like most Americans (I would guess), I used to think veganism was crazy, wacko, just wishing for malnutrition and weak bones.  And I thought milk was amazing for my bones, eggs were full of healthy cholesterol, and most importantly now… I thought that these products came about naturally from healthy animals, since you don’t have to kill animals to get eggs and milk.  But that’s so wrong.  The truth is so very different from what I thought. 

 Just read the books I mentioned above.  I recommend also watching the film Food, Inc.  I dare you.  Don’t you want to know the best way to treat your body, the harness of your life and soul?  🙂  I’m serious! I thought eating this way would be challenging too, but the truth is that it is so much fun!  I have substitutes for cream cheese, sour cream, mayonnaise, butter, milk, CHEESE, and so many other yummy foods – all free of animal products, and all delicious.  I also recently purchased the book Vegan College Cookbook from Peta – it’s a God-send!!  I can make everything in the microwave, and still eat tons of great food.  So quick and easy for me, as I study a lot and get distracted very easily (I should be studying for Spanish at this very moment, in fact).

Lastly, I just wanna say that the main reason I completely made the switch is because I realized this is how I’m meant to live.  I’ve always been a rather sensitive person, and I have always had a goal to do something with my life that allows me to help people.  Now I realize I can extend that even further.  Animals are some of the most amazing creatures ever.  I’m cuddling with my sweet little doggie while I’m typing this.  She gives me love, day after day, no matter what mood I’m in or if I get onto her or not.  And every time I come home from class, she acts as if it’s the best day of her entire life.  Plus, animals do not judge, or steal or kill or fight out of hatred.  But they are living, breathing, warm beings.  Sure, we don’t cuddle up with cows or pigs or chickens in our homes… but did you know that pigs are actually smarter than dogs?  And they will cuddle up with you, just like a dog?  And cows have shown problem solving skills, chickens will cry when they know something bad is happening (before being slaughtered).  I would never even dream of eating my sweet dog, let alone let anyone try to kill her.  I know feel the same way about all animals. I just refuse to ignore the inhuman way our animals are treated.

I feel that if there’s nothing else honorable I do while I’m on this earth, I can say that I have spared lives, and have saved those innocent beings without a voice to save themselves.

New Energy!

Okay, I just found one of the greatest things ever today. There’s this new Sun Harvest Farmer’s Market here (also one of the greatest things ever) and as I was looking around at all the goodness there today, I happened upon… A Steaz all natural, zero calorie, STEVIA sweetened energy drink. My day has official been made.

I’ve been waiting so long for something like this to come along. I’m one of those people who just can’t normally function without a little extra energy source, and this is especially true when studying for a big test. I love the taste of sugar-free Red Bulls, but I never liked the idea of drinking aspartame, and I don’t usually feel like they do enough good for me to off-set that. So I am very happy today.

Made with green tea, yerba mate, guarana, and acai to boost energy levels, this drink is awesome to me. Now the taste… Is a tad different. It’s slightly carbonated, which is nice, and the slight sweetness makes it even more appealling. There’s an aftertaste that I think I will get used to. It’s not gross, just different.

Hello world!

Welcome! This is my blog I have moved from a Blogger.com page I had before. Since I like to do a lot of my blogging on the go using my phone, and because there’s is currently no phone app where I can properly write to my Blogger page, I thought I would give WordPress a try.

So here I am! This is my food/life blog by me. I plan to update it as often as I can with my everyday eats and such. Starting with… Something I just enjoyed!
